Which is the most divine Indian dish?

Divine - that's about as superlative as it gets.

It's a challenging question for one with a limited experience of Indian food -- mainly confined to what's available here in Malaysia's known hotspots for good Indian cuisine. Even then, it is mind-boggling vast and varied. However, I shall rely on personal recollection collated through memorable moments sampling dishes of this top cuisine.

Because you ask for "the most divine", I tend to gravitate to the renowned and familiar such as Butter Chicken or Rogan Josh or Hyderabad Biryani even Banana Leaf Rice - all excellent. But those dishes go through, I suspect, a state of preparation and virtuoso cooking that only experienced chefs can handle comfortably in order to bring about a masterclass quality. Aroma, flavour, taste come together sometimes in ways that I find mystifying. But then I'm a novice. So from this viewpoint, a 'divine Indian food' would be: South Indian Appam; Aapam (hope I've called it correctly).

Honestly, I didn't know anything about this perfection-in-a-pan when I saw a gentle lady making it in front of the Indian restaurant. "This is appam la" - my companion said as she stepped inside. This was my first Appam experience many years ago. I was still standing outside engrossed with the way Appam was lifted off like tiny flying saucers - I immediately ordered two as teatime snack.

Many a time, a certain food, a new dish holds first impressions for a diner. Appam was it then. I enjoy it whenever I come across it because not many restaurants make them fresh there and then. Don't normally order Appam when I see a pile of them stacked cold already made earlier in the day. Nope, I want mine fresh made accompanied with coconut milk and kari preferably vegetable. I have creamy sweet fragrance, I have savoury spicy to go with crispy and soft Appam (aapam) - how do I say "perfection" in Indian?
