You have to eat India’s three states’ cuisine for the rest of your life. What are they?

Although India has many states I don’t think every state has entirely different cuisine. The division of states are mostly based on Language. Many neighboring states share similar cuisine with subtle differences. There for I want to choose totally different cuisines from different part in-order to have more varieties.

Also note I’m vegetarian. Some time certain states are popular for non veg delicacies but still they will contain amazing veg foods

For example Kerala is the state with maximum number of non vegetarian and popularly known as Beef eating state.

But still you can live in Kerala and eat this amazing veg sadaya which is exactly same as our Jaffna (Sri Lankan) vegetarian lunch.

Or this pittu with Kadala curry.

Any way based on similarity I don’t prefer Kerala cuisine. I’m a person who like things are different from mine.

I do not hate single vegetarian food from India. That being said. let me start listing three of them aptly for your query.

Unbreakable one! “The Punjabi”

They have amazing vegetable side dishes and variety of wheat flat bread. For a person who is born in the country of Rice and coconut Wheat flat breads are godly. I love them. Thanks to Persian / mughal influence still punjabi cusine has most exotic tastiest food in India in my opinion.

Sarson Ka Saag Aur Makke Ki Roti

Tamil Nadu.

I really consider south Indian cuisine as most healthy. I love food from Tamil Nadu as well as Andhra and Karnataka. Karnataka makes the best dosa and Idly. Tamil Nadu has best vadai and Pongal. Then Andhra has the spiciest delicacy which won’t hurt your stomach but cure it.

The Tamil nadu Lunch Rice meal is an awesome experience is scientifically proved best eating experience the entire world has to offer if you care to eat in the way it was suppose to be eaten .

Land of momo: Sikkim

I’d love steamed momos. They also have some Chinese Tibetan flavors in their food. but in china it is extremely difficult to find confirmed veg food but in Sikkim we can.

Worth mentioning that Gujarati and Rajastani foods aren’t that marketed much as it deserve in Indian continent. I’m being vegetarian I assume I will love their cuisine as well given the fact majority of those states are pure vegetarian. So it’s highly likely that the’ll have traditional vegetarian dishes. I have heard about the invasions of dal bati churma and dholka. But I haven’t tried them enough to make my mind and risk it right now.
