What Food does your state have?


I am inhabitant of jharkhand .It is tribal area and fully covered with hills and forestes.Its not only opulent with natural minerals but its tribal traditions and cuisine.
We have lots of thing but mentioning some important and particular delicacy of jharkhand including tribal dishes.
1.Rugda:
It's a kind of mushroom found in jharkhand, after heavy downpours for continuously 2 or 3 days soil underneath the Sakhua or saal tree gets fissures and this special kind of mushroom explode out its mud stained completely is found only for 15 or 20 days in monsoon only.Highly expensive and delicate (fragile)takes huge effort to clean it owing to its mud.Then cooked with some spices and served with rice or rotis.Must try,you won't get it anywhere else.I haven't tasted it since my marriage.
.2.Khukhri :I,e
Mushrooms ,there are three kinds of mushrooms found in Ranchi.Even in my garden but I like the one explodr out of sand tastes best.It also take extremely huge effort to clean but thtaste….Aaah the particular taste it more than heaven …
just chop it and cook it with roughly chopped onions and green chillies and taste the magic.Though many people cook it with more spices for gravy but it seems to me adding too much spices out beats it's own taste an aroma.Tastes best with plain rice and rotis.
3.Dhuska :
Presoaked
Split chickpeas and rice is grinded with a piece of ginger ,some cloves of garlic and green chillies.Then salt ,whole cumin and turmeric is added and batter ready to deep fry.Mostly eaten with mutton curry ,potato curry and green chutney of coriander and chillies.This is the most quintessential dish of jharkhand indeed,essential in every festivals .Our Sunday is incomplete without it.
4.Chilka roti :Batter of rice is prepare like dosa .
5.peetha:Momos of rice flour stuffed with either spicy vegetables ,lentils or Jaggery.
6.Barra.
Split black grams grinded coarsely then finely chopped onions,ginger,green chillies and coriander leaves are added.And finally deep fried in mustard oil much like bade of south india.Tastes best with tangy and coriander chutney only.(
Not getting exact pics of Barra so I uploaded pics of green lentil bada made by me.It looks exactly like this but made with black gras and tastes much better than it.)
7.Anarsa.
Same like those of Adhirasam of southern India.Majnly prepared in the occasion of Tusu festival during Makar sakranti .Rice flour is kneaded with jagerry water then diced coconut and green cardamom are added for flavour.Roll it flat like pooris with greased hands and deep fry it.
8.Eggs of red Ants.
Tribal dish not too much knowledge regarding this.But I have seen tribal people collecting those eggs and consuming it.
9.kesar peda(A kind of Indian sweet) of Deoghar.
Extremely delicious pedas of Deoghar, one of the prominent jyotirlinga of India.Babadham pedas are main prasad of Shiv Ji,its extremely delicious and mouth melting.MUST TRY,those divine pedas.
10.karil I,e bamboo shoots.
Newly tender off shoots of bamboo tree is finely chopped and fermented. Then cooked it with some spspices and mustard paste .
11.Dubki:fine paste of black grams are directly dipped into the gravy like fritters ifnspices and let it boiled and cooked.
12.Dudhouri:Kneaded balls of rice flour and dry fruits with green cardamom is deep fried into the clarified butter then dipped in sugar syrup.Many people enjoy it with Rabri I,e condensed milk.
BEVRAGES
1.Hadiya.It’s rice beer:
The making involves the use of Ranu tablets.Which is essentially a combination of about 20-25 herbs and acts as fermentator.The ranu tablets are then mixed with boiled rice and left to ferment. It is served cool and has lower alcoholic strength than other Indian country liquor.
