The milk is slowly boiled and reduced. Then the sour curd is added and allowed to ferment to become a Curd . Then this curd is churned to remove the butter and whey ( the water ). Then the Butter is clarified to become Ghee. The difference between Tamil Ghee and other Ghee is when the Butter gets clarified , where all the water gets evaporated then the tamil homes add either Beetle leaves or DRUM STICK leaves this will make the ghee more concentrate and makes the leaves very crispy. Thus making the Ghee more flavourful and superior quality.

Ghee made like this has lots of medicinal quality and it stays for a long time without getting spoiled.
